Finley’s of Green Street will soon be home to 43 Green, with Chef Lewis Vargas at the helm. Finley’s has always been known to serve pub food and entertain the 20 somethings into the late hours of the night, but will soon be offering a dining experience unlike ever before.
Chef Lewis Vargas has an impressive resume including the esteemed two-star Michelin-rated Gary Danko in San Francisco and most recently Maidstone restaurant in Woodbury. He co-owned Maidstone and won local acclaim in both 2022 and 2023 as best in town. Chef Lewis has now found a home at Finley’s where he has been quietly transforming their menu.
Chef Lewis has been elevating the dining at Finley’s over the last year by adding dishes like his Crispy Naked Chicken, Slow Cooked Beef Short Rib and Shrimp Pappardelle. His culinary range allows him to take their menu to new levels and with that, comes a new name for the restaurant…43 Green at Finley’s.

43 Green will offer a Friends & Family Soft Opening on Thursday June 6th and will officially be ready to roll on Friday June 7th. We had a chance to sample some of the new menu and all I can say is WOW! This isn’t Finley’s anymore, this is 43 Green.
On the menu you’ll find small bites like Housemade Whipped Ricotta with figs, fresh thyme, honeycomb, maldon sea salt, cranberry and bread. In addition, you’ll find She Crab Soup, Tuna Crudo, and an outstanding Crab Cake with sweet corn bisque, tomato and okra relish. The Seafood Bar offers up Shrimp Cocktail, Little Neck Clams, East Coast Oysters and Chef Lewis’ famous Mussels in white wine and garlic or pernod and fennel.
Finley’s will be keeping their Famous Lobster Rolls served Traditional or Connecticut style, but have added a Spicy Lobster Roll with Boston bibb lettuce and avocado. If you’re a salad lover, you’ll find 5 options including a Beet Salad with Arugula, fennel, pistachios, chevre, strawberry rhubarb vinaigrette and ricotta salada. In addition, they will be offering a Kale salad and an Earth Ball with pesto brown rice, blanched dark greens, blanched broccoli, avocado and tofu.
For entrée selections, you can choose from 4 pasta dishes including Housemade Ravioli with fava bean, ricotta & mint in a light brown butter sauce or Linguine Vongole with manila clams, white wine, garlic, parsley, and chili flakes.
In addition, you’ll find Prime Cut Skirt Steak, Rack of Lamb, Duck a l’Orange, and Naked Chicken. For the seafood lovers, 43 Green offers Lemon Sole Meuniere with roasted cauliflower puree and Alaskan Halibut with melting leeks, corn chowder broth and manila clams garnish.
We were blown away by the tasting and would HIGHLY recommend making a reservation to experience 43 Green for yourself.
Wait, Does This Mean Finley’s is Closed? No
For those of you wondering what’s going to happen to Finley’s, here’s the scoop. Finley’s is still the bar and home to 43 Green (the restaurant). The restaurant will be located inside Finley’s where you can enjoy indoor or outdoor dining on the front or back patio. The bar area will still serve a happy hour and pub menu and you can order dishes off the 43 Green menu as well. The pub and happy hour menu’s are only available at the bar and at designated times.
As far as live music, Finley’s offers bands on Friday and Saturday nights from 8pm-11pm in the main bar area and a DJ after until close. It’s a $10 cover for the band and a $5 cover for the DJ.
If you’re wondering if Finley’s will still be THE party spot on the weekends in Huntington, YES. Their outside bar is now open on the weekends and with 2 indoor bars, it’s the biggest place to party in town.
*For those looking to dine at 43 Green and want to avoid the late night crowd, the restaurant closes at 10 and the young kids don’t usually arrive until after 10:30.
