Gino’s of Farmingdale has long been a staple for pizza lovers in the community. But now, the popular eatery is expanding its culinary horizons with the launch of The Pasta Project — a creative concept offering made-to-order pasta bowls with a customizable twist. With its recent rollout, Gino’s is offering guests more reasons than ever to visit, dine, and discover.
Fresh Pasta Made to Order Now at Gino’s
At the heart of this new endeavor is a pasta experience unlike anything else on Main Street. The Pasta Project offers guests the opportunity to build their own pasta dishes, beginning with a choice between mezzi rigatoni or tagliatelle.
From there, diners can select from a variety of rich, house-made sauces and flavorful toppings — even finishing their dish with premium olive oils for a personalized touch.
Each pasta creation begins with fresh dough, formed in-house and cooked to order. The pasta is then swirled inside a massive Parmigiano Reggiano cheese wheel imported directly from Italy, resulting in a decadent, creamy finish that elevates every bite.
Italian Desserts and Specialty Drinks
In addition to its innovative pasta bar, Gino’s has expanded its offerings with a selection of authentic Italian desserts and beverages. Guests can now enjoy creamy gelato imported from Italy, indulgent bomboloni (Italian donuts), and traditional tiramisu.
A new coffee station has also been introduced, serving cappuccinos, lattes, macchiatos, and even cold brew coffee on tap. For those who prefer something stronger, beer is also now available.

The inspiration for The Pasta Project came after the ownership team — who also operate Gino’s locations in Northport, Kings Park, Commack, and Nesconset — visited Italy and experienced similar pasta bars firsthand. Bringing this concept back to Long Island, they’ve created what they call a “business within a business,” seamlessly integrating the Pasta Project into their existing pizzeria setup.
Though the concept is currently exclusive to the Farmingdale location, plans are in motion to explore how it might be introduced to other Gino’s locations in the future.
